White varieties
Xareló, Parellada y Macabeo (o Viura)
Is the varietals of Cava, the triad found in traditional Catalan sparkling wine production. Many cellars of Penedés have proven increasingly with other varieties, such as Chardonnay, white grape reigns in Burgundy and also widely used in Champagne. There cava cellars have also been daring with Pinot Noir (traditional grape also of Burgundy and Champagne that is used to make pink champagne or blanc white ink -wines Noir grape to which the skin is removed).
Macabeo or Viura is the queen of white grapes in wineries in Rioja, and with it have traditionally produced wines aged in barrels of character (in the style of French white Graves in Bordeaux, however, have been left virtually to develop as the market demand fruitier white wine).
