Differences and similarities between Cava and Champagne

ELABORATION
Cava
It is made according to the "Champenoise" method discovered by the Benedictine monk Dom Perignon, Hautvillers Abbey late s XVII. It is characterized by the second fermentation and aging of wine are held in the bottle, allowing the bubbles acquire naturally. For optimum ripeness, require relatively short aging (2-4 years).
Champagne
It is made according to the "Champenoise" method discovered by the Benedictine monk Dom Perignon, Hautvillers Abbey late s XVII. It is characterized by the second fermentation and aging of wine are held in the bottle, allowing the bubbles acquire naturally. They require long aging (5 years or more) for optimal ripeness.
