Differences and similarities between Cava and Champagne

Cava
Basically, the cava is made in the Catalan Mediterranean, which enjoys a sunny climate and low rainfall. The grapes are therefore less acidity than in Champagne. But to get that higher acidity needed for a second fermentation in the bottle, it is necessary to harvest them early. Vintage in this area, the first in Spain, begins in mid-August.
Champagne
The Champagne area is located near Paris, around the town of Reims. The climate is Atlantic, rainy and cold. Grapes in Champagne have higher acidity and out with lesser degree, so it is necessary "chaptalizar", ie adding sugar to achieve grade.
