AGING AND EVOLUTION OF WINE:

In the oak barrel wine he gets tannins and aromas of wood, giving it greater complexity. In addition, wood has tiny pores that let oxygen, which also is aging wine. Only wines with more structure and concentration can withstand long periods of aging.
In the bottle, the wine is rounded and refined. After about 5 or 10 years in the bottle (depending on the wine) wine reaches its highest degree of quality, then the quality of the wine begins to decay slowly.
