We will continue with another white wine for Christmas, there is an Albariño, and good accompaniment for fish or seafood ....

Hallmark. The winery’s true standard. Pure distilled granite, bathed by the atlantic rain and the characteristic sun of a south facing vineyard, tuned by it’s malolactic fermentation. Giving it time. At Pedralonga we give time to wine. Following the grape harvest we let it settle for months in the cellar waiting until July for bottling, when its perfectly stable. After bottled the wine evolves so well that stays alive for years.
Aged:
Genuine Albariño. The malolactic maceration on lees, without yeast, results in a flawless Albariño which expresses the grape’s full personality.

El auténtico estandarte de la bodega. Puro granito destilado, bañado por las borrascas atlánticas y por el sol de un viñedo que mira al sur, y que, después, está afinado con las notas que aporta la fermentación maloláctica.
Notas de cata:
Amarillo intenso. Nariz cítrica con toques de pomelo, manzana y recuerdos lácticos.

The white wine Can Credo is made exclusively with grapes from vineyards owned by Celler Credo in the county of Alt Penedès (Barcelona). All of the vineyards have been cultivated in accordance with the principles of organic, biodynamic agriculture. In Celler Credo’s vineyards we let plant cover grow spontaneously between the vines. This cover plays a crucial role, loosening the soil, regulating water retention and drainage (essential in the dry farming system we practise), and helping to foster biodiversity and maintain a balance in the vineyard ecosystem. Natural treatments based on medicinal plants (phytotherapy) are applied to the vines to control the presence of fungus and strengthen the vine’s defences in a natural way. All Celler Credo grapes are harvested by hand to ensure the excellent quality of the fruit. Before pressing, the grapes used to make Can Credo wines are inspected on a manual selection table. All our wines are produced and bottled on the property.

We end with another cava, in this case of Cavas Llopart ...
                   LLOPART ORIGINAL 1887 BRUT NATURE GRAN RESERVA

Cava made with the most
traditional methodology in
commemoration of the 125th
anniversary of the first bottle of
Llopart Cava. Grapes coming from
old vines located in the mountains
with very low production. The
label is a reproduction of the
original label in 1887.
TASTING NOTE
Old gold color with crystalline
reflects. Very fine bubbles,
perfectly integrated. Creamy.
Depth aromatic (ripe white fruit,
orange peel...) with aging notes
(brioche, toast, butter, nuts...)
Powerful taste, rounded acidity,
very broad. We can find notes
from the yeast autolysis caused
by the long aging in the bottle.
Delicate and lingering aftertaste.
In this cava predominates the
fineness given by the variety
Montònega (phenotypic
adaptation to the terroir in
altitude of the Parellada variety).
Fine touches from evolution
which give this cava a great
complexity

Cava elaborado con la
metodología más tradicional
en conmemoración del 125
aniversario de la primera botella
de cava Llopart. Uvas procedentes
de 3 viñas viejas de montaña con
muy baja producción. La etiqueta
es una reproducción de la etiqueta
original del año 1887.
NOTA DE CATA
Color oro viejo con reflejos
cristalinos. Burbujas muy finas,
perfectamente fusionadas.
Cremoso. Profundidad aromática
(fruta blanca madura, piel de
naranja...) con presencia de notas
de crianza (brioche, tostados,
mantequilla, frutos secos...) Gusto
potente, acidez redondeada, muy
amplio. Destacan las tonalidades
provenientes de la autólisis de
las levaduras provocada por el
prolongado envejecimiento en
botella.
Post gusto delicado y persistente.
Cava en el que predomina
la finura de la variedad montónega
(adaptación fenotípica de la
variedad parellada a terrenos de
altura), destacando las delicadas
pinceladas evolutivas que le
aportan gran complejidad.

Tasting Notes:
Colour: It is a cava with an expressive golden colour that still retains pale tones in spite of its long ageing. Its splendid effervescence generates a large number of ephemeral streams of bubbles, which rise up to the surface forming a stable crown. Aroma: Its aroma is penetrating, complex, light-hearted and very fresh. This is a surprising cava because, despite being a Gran Reserva, it maintains a great deal of freshness in which one can make out clear notes of white flowers and fleshy fruit. Its complexity increases progressively and, very soon, lightly toasted notes and a honey background can be discerned. Taste: Its texture in the mouth is intense and evocative - a real joy. Its effervescence gently caresses the palate, revealing all the creaminess of its mousse. Unctuous and very persistent, it leaves us with a memory of its deep, delicate aromas.
Pairing:
Especially able to serve with main courses, with body and tasty, such as roasted meats, beef with mushrooms, cannelloni with vegetables and lobster, also with desserts but not very sweet.
